In the heart of Liverpool's city center, a culinary gem has emerged that's unlike anything the city has seen before. Bistro Lao, located at 16 Rodney Street, has made history as Liverpool's very first Laotian restaurant, offering diners a unique taste of Southeast Asian cuisine that has been carefully crafted with both authenticity and local appeal.
A Story of Heritage and Resilience
Behind Bistro Lao is a deeply personal story that spans continents and generations. Vikki Teh, who co-owns the restaurant with her husband Kean Teh, brings with her a family history that reflects the resilience and cultural preservation that defines Laotian cuisine.
"My mum's been on site for the past few weeks as we've been sampling the dishes, making sure we get the right flavors," Vikki shared. "I've grown up with this food and, and I'll be in the kitchen even though I'm not a great cook but I'll be in the kitchen to make sure everything that comes out is the way it should be and how it was when I was at home."
The Teh family's journey began in Laos, where they lived before the end of the Vietnam War in 1975. "Following the end of the Vietnam war in 1975, we were forced to leave our home in Laos, seek refuge in Thailand, and eventually arrived in England in 1979 through the Save the Children Fund," Vikki recounted. This journey of displacement and resettlement has shaped their approach to food – not just as sustenance, but as a connection to heritage and identity.
French-Inspired Bistro Ambiance
What makes Bistro Lao particularly unique is its approach to presentation. "It's been inspired by the French colonisation of Laos, so it's got a French feel to it, a bistro style," Vikki explains. The result is a space that's both intimate and sophisticated.
The restaurant features a minimal, chic design with a ground floor dining area and a small basement that can accommodate around 20 guests. This intimate setting creates an atmosphere where the food truly takes center stage, allowing diners to fully appreciate the complex flavors of Laotian cuisine.
Bold, Fresh Flavors of Laos
Laotian cuisine is characterized by its bold, fresh flavors that balance sweet, salty, sour, and spicy elements. Unlike some richer Asian cuisines, Laotian food is deeply flavor-driven rather than heavy or rich. At Bistro Lao, expect dishes that highlight the natural ingredients and traditional preparation methods that have been passed down through generations.
One of the hallmarks of Laotian cooking is the use of fermented sauces, particularly padaek, which is a traditional fish sauce that adds depth and complexity to dishes. The restaurant also features plenty of grilled meats and fish, spicy salads, and light soups that offer a perfect balance of flavors and textures.
Sticky rice, a staple in Laotian cuisine, will be featured prominently on the menu. Traditionally steamed in bamboo baskets, this glutinous rice is often eaten by hand, formed into small balls and dipped into various sauces and accompaniments.
Signature Dishes to Look For
While the full menu may evolve as the restaurant settles in, diners can expect to find traditional Laotian favorites alongside creative interpretations that might appeal to Liverpool's diverse palate. Some dishes that are likely to make an appearance include:
• Larb: A minced meat salad seasoned with toasted rice powder, herbs, and spices, often served with sticky rice
• Khao soi: A Northern Laotian tomato and meat noodle soup that's sometimes called "spaghetti pho"
• Mok pa: Steamed fish parcels wrapped in banana leaves, infused with lemongrass and other aromatic herbs
• Tam mak hoong: A papaya salad that's a staple throughout Southeast Asia but with distinct Laotian flavors
• Grilled meats and fish: Showcasing the charred, smoky flavors that are characteristic of Laotian barbecue
A Labor of Love
The opening of Bistro Lao represents years of planning and dedication. "It's been going on for quite a while now because we've tried to take our time in opening because we want to get it right, especially with the food," Vikki explained. This careful attention to detail ensures that each dish not only represents authentic Laotian flavors but also meets the high standards that Liverpool diners have come to expect.
The restaurant also features a carefully curated wine selection from a boutique supplier, with all wines available by the glass. This thoughtful pairing of beverages with food demonstrates the Tehs' commitment to creating a complete dining experience that honors both tradition and contemporary tastes.
Bringing Community Together
For Vikki and Kean, Bistro Lao is more than just a restaurant – it's a way to share their heritage with the Liverpool community and create a space where people can come together to enjoy good food and cultural exchange. In a city known for its diverse culinary scene, Bistro Lao adds a unique chapter that celebrates the flavors of Laos while making them accessible to new audiences.
As Liverpool continues to evolve as a food destination, Bistro Lao stands as a testament to the power of food to connect us to our roots, introduce us to new experiences, and bring people together across cultural boundaries.
